Record yourself… Then look back on your recordings in 90 days after making them. I bet you are improving and noticing the road for the turning of the wheels.
I just looked back at some of my old recordings and found that I was doing better than I felt I was, and with about a year’s worth of recordings I could see the growth I was missing when I was in the middle of it.

I don’t think there is a better way to train this (and I am guilty of not spending enough time on it) Than running scales and doing the spider walk exercises. These directly build fret hand strength and dexterity AND build Fretting/Picking hand synchronization.
I just saw a thing where someone was playing scales in triplets with a pick… This, I think is an exercise I will adopt…

I can understand this those frets start getting tight. Mucho practice makes it easier… That’s the only good answer I can give for the bar chord form. You can try just playing the triad at the 7th fret on the top three strings instead of the bar chord, if you need the voicing that high. But really it still comes down to practice until they become second nature really

Since you seem to have a penchant for folk music, How about looking across the pond at Steel Eyespan or Fairport Convention. Some good music and interesting history

I think what may be going on is gorilla grip causing you to bend strings out of tune. This is a thing I think most guitarists struggle with now and again.
If this is what is going on, in my less than professional opinion, I suggest lightening up and dealing with the string thuds while your fretting hand learns it’s craft. It takes time and it is never perfect out of the gate.
Myself, I am dealing with a similar issue while trying to play a Cm6 at the moment. I either thud it, or bend it… If I smash the strings it is out of tune, but a thud is just percussive embellishment while my left hand is learning what to do. So you aren’t the worst guitarist in history, like I said, just developing.
